Stats: junior who was recruited by the Panthers and was a member of the 2015 premiership winning Under 20s team. He would experience more success in the lower grades being a member of the NSW Cup premiership winning team in 2017.

Promoted to the NRL squad for the 2018 season, he made his NRL debut in Round 6 against the Titans. Unfortunately, he was sin binned soon after coming on the field and suffered a similar fate in his third match. He would make six appearances in his first season, all of them off the bench as a replacement forward.

His first appearance in 2019 was as starting lock against the Tigers in the Magic Round at Suncorp Stadium and only played one more match in the NRL that year – Ellis spent the majority of the season in the NSW Cup, often as a starting front rower and also appointed as captain.

Whilst once again named as part of the NRL squad for the 2020 season, he was unable to crack it into the first grade team and in mid-season was granted a release to join St. George Illawarra. After 18 appearances to the end of 2021, he signed with Wigan in the English Super League for 2022, where he is currently contracted to the end of the 2024 season.
